Wow, this cake safe could have saved the day... actually, a few of them.

Last October I was called by a dear friend that needed me to fill in at the last minute for their wedding cake. Literally just 2 days before the wedding. I also happened to have 2 more weddings that weekend. PANIC Mode.

So off to baking I go! Everything went so well, I actually had finished up all the cakes ahead of time, and started in on other cakes. (life saver!)

As you can imagine, the disaster was shortly around the corner... literally. As always, I drive up my very steep driveway and hold my breath every time, hoping all will be ok. Thankfully it was. Smiling I continued on my drive, 2 hours ahead of time. As I gained speed, a deer ran in the road and I nearly wrecked my vehicle. The car vehicle was ok, but unfortunately, the cake was not.

The top two layers could not be salvaged at all, the bottom two were ok. I turned around and drove back home, hyperventilating the entire way. Thankfully I had already started baking other cakes and they were the same flavor as the top two layers. I was able to finish the cakes and deliver. This time, I did not assemble the cakes till I arrived.

Of course the story is not over because I had to get back to the ovens and bake the replacement of the replacement cakes, putting me behind schedule and still in panic mode for the rest of the weekend.

The cake safe would have saved me several hours of work and panic, not to mention the cost of time and money in the process!
